So, ‘thank you Lindy Gregg!’, here is the recipe for Oat and Almond Breakfast Bars

1/2 C vegetable oil, 1/2 C honey, 2 tsp vanilla extract, 1 large egg, 2 C old-fashioned oats, 3/4 C flour, 1/2 C light brown sugar, 1/2 C sliced almonds (can toast if you want; don’t need to), 1/2 C wheat germ, 1/2 C raisins/craisins (I also may try chocolate chips, peanut butter chips, blueberries, or anything else that sounds yummy!), and 3/4 tsp salt

Preheat to 350 degrees; line 9×13 pan with foil and grease

In 2 C measuring cup or medium size bowl, stir oil first, then honey, vanilla, and egg until mixed well. In large bowl, with fork, mix oats, flour, sugar, wheat germ, raisins, and salt. With rubber spatula, stir honey mix into oat mix. Scrape into pan and pat down with wet hand.
Bake for 30 – 35 minutes; let cool for 1 hour, cut as desired

Let me know what you think!
